Roasted Vegetable Cheesy Quinoa Mac

Hey there, I have been working hard at this eat clean reset but have been enjoying it, trying out new dishes that are healthier not only for but for my family too. Was looking around for a great side dish recipe and thanks to a referral to https://www.facebook.com/jasonsfunctionaltrainingstudio, I found some great dishes and decided with a little tweaking of my own to share this dish with you first!

I served this dish with a main course of baked chicken thighs from Blue Goose.

Preheat the oven to 400 degrees put¬† salt & peppered chicken on a bakers rack (which helps the chicken from baking in it’s own fat) Bake in oven for 40 minutes until skin is crisp. For those of us that are watching our calorie intake remove the skin. ūüėČ

You will need:

  • ¬†3 cups Cooked Quinoa (cooked According To Package Instructions)
  • 1 cup broccoli florets, chopped into small chunks
  • 1/2 red bell pepper, diced
  • 4 raw carrots, sliced thinly
  • Handful baby spinach
  • 1/2 cup corn peas
  • 1/4 cup olive oil
  • 1 garlic clove, mince
  • 3 Tbsp. whole wheat flour
  • 1 1/2 cups milk
  • 2 cups shredded cheese (I used half skim mozza as it is lower in fat and half cheddar)
  • Kosher Salt and pepper, to taste
  • 2 Tbsp. Panko breadcrumbs (optional)

Cook your Quinoa as per the directions on the box. I cook mine in a rice cooker with chicken stock!

Prepare a large baking sheet by lining with aluminum foil and coating with a little olive oil or nonstick cooking spray.

Place prepared veggies on the baking sheet.

Bake for 20 minutes, or until vegetables have softened. Remove from oven and set aside.

Meanwhile, heat oil in a large skillet over medium heat. Once hot, add garlic and cook 30 seconds.

Whisk in flour and cook 1 minute

Gradually whisk in milk, stirring constantly until mixture is slightly thickened. Remove from heat

 Stir in cheddar cheese until well distributed and melted. Add salt and pepper and additional spices as desired.

Mix veggies, cooked quinoa, and cheese sauce together.

Place mixture in a baking dish or ramekins and sprinkle with panko breadcrumbs. Place under the broiler in your oven (500 degrees) for 2-4 minutes, or until the top is golden brown.

After broiled it is ready to be served and enjoyed.. Guilt free and healthy!

The most amazing poppyseed dressing you ever tasted… in your life!! With a kicked up spinach salad!!!

Poppyseed Dressing

You will need:

  • 3/4 cup of Hellmans Light Extra Virgin Olive Oil Mayo
  • 1/3 cup of sugar
  • 2 tablespoons of cider vinegar
  • 2 teaspoons of poppy seed

In a mason jar add your mayo.

Next add your sugar.

Next add¬†the cider vinegar.. I bought mine locally from Boate’s located in¬†Woodville, NS but any kind will do.. I go local if I can! ūüôā

Finally add your poppyseed which can be purchased at your local Bulk Barn.

Cover your mason jar with a lid and shake vigerously to mix for about 3 minutes… put in the fridge to chill, covered in the Mason jar this will keep for 2 weeks but I guarantee it won’t last that long!

Kicked up Spinach Salad!!

You will need:

  • 1/2 package of baby spinach, washed and dried (I also remove the stems)
  • 3 tbsp slivered almonds
  • 2 tbsp olive oil
  • 2 cloves garlic whole
  • 1 egg boiled and sliced
  • mandrin oranges peeled and seperated (can also used canned)
  • 1/2 red onion sliced
  • 2 tbsp dried cranberries chopped
  • 3 tbsp of skim mozzarella cheese

This is a pretty straight forward recipie.. first I remove all the stems from my baby spinach, then put it in a strainer to be washed. When washed I place the spinach on paper towel to dry. If you have a salad spinner omit the last two steps and use the spinner!

In a frying pan on low heat add your extra virgin olive oil and whole garlic, I usually crush a garlic with a knife to help release all the flavour. Then add the slivered almonds to toast them.

Remove garlic cloves and put toasted almonds on a sheet of paper towel to remove some of the access oil. Remove the garlic cloves and put toasted almonds on a sheet of paper towel to remove some of the access oil. Add the red onion.

Add the toasted Almonds.

Next add the egg and the mandrin oranges (I made this salad again the next day with fresh navel orange and pineapple, you could also use apple any fruit will work)

Add skim mozzarella cheese.

Top with Poppyseed Salad Dressing and the chopped dried cranberries to finish!

So thats it, a salad that you will love and keep on loving.. The dressing is amazing and could become addictive, but if you use the light ingredients like I mentioned in the recipie, then you should be good to to.

My take on cousin Nick’s Smoked Chop Chowder!!!!

“Smoked Chop Chowder”

 

So as I told you in my last blog I decided to try my own take on my cousin Nick’s Smoked Chopped Chowder. This is one of his original ideas and I thought it sounded too mouth watering not to try myseld.. and of course it turned out delicious!! I loved this dish because I got to take a trip to my favorite local meat market Meadowbrook Meat Market¬†to purchase the smoked chops, something I had never tried before!

What you will need:

  • 2 smoked¬†chops cubed keep the bones
  • 1 can light evaporated milk
  • 1 carton of low sodium chicken stock
  • 1 cup of water
  • 2 med sized onions chopped
  • 3 cloves of minced garlic
  • 2 stalks of diced celery
  • 2 green onions
  • 1 package of mushrooms¬† sliced (cremini or white)
  • 1 med sized sweet potato peeled & cubed
  • 3 med sized yellow potatos peeled and cubed
  • 1/2 cup grated low fat old cheddar cheese, Nick uses a block of Velveeta, sounds delicous however I used the cheddar because I am still watching the calories and fat intake ūüôā So it’s up to you!!!

 

 Preheat the oven to 350. Turn burner onto 7, in an oven ready pot or roaster (I used my amazing dutch oven) Add  to the bottom of your pan some extra virgin olive oil, put in your cubed pork and bones fry until browned. When browned add your onions, celery and garlic. Add some of your stock enough to cover the meat and veggies.

Cover and bake in oven for 45 minutes to tenderize the meat. Next add your sweet potato, yellow potatos and mushrooms!

Add the remaning stock, can of evaporate milk and water. On the stove at about 6 cover and cook until the veggies are tender, for about 30-45 minutes. Make sure it doesnt come to a boil or your milk will curdle, so if you need to turn it down do so just dont let it come to a boil.

When everything is tender, then add your cheese, let melt and sit for another 10-15 minutes. I forgot to add the green onion to mine but this is when I would do it. Season to taste with salt and pepper! This is another thing I have been meaning to tell you but I use Kosher salt, I have a bowl of it sitting on my counter. We use this because it is better for you and has the salt taste with out being iodized, it’s a more natural product!

This turned out awesome and I love that I got the idea from my cousin.. It’s an amazing that I will definitly make again! Hope you give it a try too!!

Skillett Lasagna, easy and delicious

Happy Valentine’s Day Everyone!!

 

I know it has been awhile since I posted last but life passes you by quickly and believe it or not sometimes this blog is not one of my top priorities…¬†I do want¬†to say that no I did not make this for my sweetheart for Valentines day but¬†¬†I made this recipe last week for my boys and of course it was a big hit.. It is also a very¬†healthy dish which for us is important to us!!¬† So here’e what you have been waiting for my recipie for:

“Homemade Skillett Lasagna”

 

  You will need:

  • ¬†5 sticks of lasagna oven ready, smart pasta or whole wheat broken into pieces
  • 1 cup of fat free cottage cheese
  • 1/2 cup of grated¬†Skim Mozzarella Cheese
  • 1 jar of strained tomatoes (San Marzano’s are the best)
  • 1 med onion chopped
  • 1 red bell pepper chopped
  • 3 cloves of minced garlic
  • 1 lbs of lean ground beef
  • 1 tsp worstchestershier sauce
  • pinch of dried hot chili flakes
  • drop of Extra Virgin Olive Oil
  • 2 tbsp Italian Seasoning

 

¬†Preheat the oven at 350. For this dish I used a cast iron pan and to finalize the dish I baked it in the oven in a foil pan, you dont need the foil pan however I had one on hand and didnt want the bother of washing 2 dishes.. hey I am normal who really likes doing dishes ūüėČ

   Turn your skillet on med, add drop of extra virgin olive oil, add your ground beef, minced garlic, onion and red pepper.  Season with Salt & Pepper, worstchestershier sauce and italian seasoning and chili peppers.

   I know this may sound a little crazy but for those of you who are watching your weight, I cooked my beef first, then put it in a strainer and rinsed it under hot water to remove any excess fat.. it seems like work but it is easy and every little bit counts!!

Next add your bottle of jar of strained tomatoes.

Now take this mixture and put into the larger pan if your frying pan can be used in the oven and holds alot there is no need to change the pan, as it is called “SKILLET” lasagna.

Once transfered to the second pan, add your lasagna noodles, then add the cottage cheese. Then Mix it up!!

Cover with the half cup of skim mozzarella cheese. Bake in the oven for a half hour or until noodles are cooked through.

Now it time to eat & enjoy!!

When the moon hits your eye like a big pizza pie…………..

I learned to make homemade Pizza Sauce from one of my favorite chef’s Michael Smith.. He is an amazing chef that shows people how cook simple and delicious meals in the comfort of your own home! Since I started making this sauce¬†I have yet to buy canned sauce since. The great thing about this sauce is that it makes enough to make 2 or 3 pizzas.¬†So for your convenience you can freeze it¬†if you have alot left over.

  • 4 cloves of minced garlic
  • 1 large onion (white or red)
  • 1 jar of strained tomatos (I use La Regina San Marzano because they are the best, also they can be purchased in 8’s at Costco and can be used in many dishes)

  • 3 tbsp of¬† dried oregano
  • 2 dashes of Worcestershire Sauce
  • Dash of dried Chili Flakes
  • 1 tbsp Kansas City Style BBQ Sauce (for a more traditional sauce, omit the bbq sauce)

First add your E.V.O.O. to the bottom of your pan turn on Med-High heat (6-7)

Add your Onions & Garlic, once they start to sautee, add a dash of water, this will soften the onions and prevent the garlic from burning, season with Salt & Pepper. Once your veggies are softened, add your chili flakes and oregano.

Then add your jar of tomato sauce, (each bottle has basil in it you can leave the basil in or remove it, if you leave it in make sure you chop it up good in the pan).

Then add your Worcestershire sauce and your BBQ Sauce.  Let simmer until it is time to put your pizza together.

Just for timing purposes it’s time to make the Sweet Potato Dollar Chips!

This is a healthier dish for you than your regular potato as it doesnt have as much starch so if you are watching what you are eating these are an awesome substitue.

Preheat your oven to 375 degrees

  • 1 larger long Sweet Potato cut into coin size pieces (1 potato feeds 3 people)

In a large mixing bowl add your sweet potato. Then coat the dollars with:

  • 2 tbsp olive oil
  • 3 or4 good dashes of garlic plus
  • Salt & Pepper

When every thing is mixed, on a cooking sheet place your sweet potato on the pan. Like this! Then put in the oven for 15 minutes, turn over and bake for another 10 minutes or until both sides are browned!

Now back to the pizza,

  • 4 small fast frying steaks, cut into small pieces
  • 1 small green pepper diced
  • 1 small onion diced
  • 1 cup of sliced fresh mushrooms
  • 2 cups of grated Skim Mozarella Cheese
  • 3-4 whole wheat pitas

In a small frying pan with some E.V.O.O. sautee your onions & green peppers, again when they start to cook at a shot of water. When cooked set aside on a plate.

Next fry your steak in the same pan, season with salt and pepper.

While your steak is cooking place your pitas on a cookie sheet (only 3 per sheet will fit), add your tomato sauce. Then add your steak

In the frying pad add your sliced mushrooms, cook only long enough to add to your pizzas the green peppers & onions.

Then add your mushrooms and last but not least the cheese.

By the time every thing is sliced and diced, sauted and grated and the pizza are prepared, your sweet potato dollars should be ready to take out of then oven.. If you have to wait a few minutes thats ok!!

Put your pizzas in the oven on bake for about 7 minutes, leave the temp at 375. After the 7 minutes turn your oven to broil melting¬†the cheese and adding that extra crisp your pita bread… Remove from the oven and serve!! I use a pizza cutter to cut them in fours….

This is a great meal that the whole family will love. It is also a¬†meal that you can play with.¬†It¬†is okay to maybe change the steak to chicken or¬†even pulled pork or add your own favorite toppings like hot peppers, olives, feta cheese¬†or even green onion. It’s all about what you like. This is also a super healthy meal with lean cuts of meat, low starch, skim cheese and a¬†thin whole wheat pizza crust.. Can’t get any better than that!

I also make these pizzas for friends as apps and they are a big hit, they are alot of work.. but they are so good that it is worth it!

The Apple Pork Pressed Panini!!

¬†“The delicious Apple Pork Pressed¬†Panini”

This recipe was created equally by John and I and started with a trip to Pete’s Frootique’s Bakery¬†where we found ¬†a round loaf of focaccia bread.. Which immediately made us want to make a panini in our George Foreman grill! After shopping at Pete’s we also came out with fresh buffalo milk mozzarella, which is mozza in it’s original form and is totally delicious!

     When creating a recipe we never really know exactly what we are going to do until we see what we want. After a trip to The Real Atlantic Superstore, qw came home with a red onion and Presidents Choice Brand Carmelized onion topping.

To begin we mixed together:

  • 1/2 cup of ground pork (you can use any ground meat we use pork beacuse it is lean and has great flavor)
  • 1/4 cup of diced cheese curds
  • 2 cloves of finely chopped garlic
  • 1 teaspoon of onion powder
  • season with salt & pepper

Form into a large patty and fry, season with salt and pepper.

While the pork is frying time to make the apple Mayo and Prepare the Focaccia and the fixings for the Sandwich.

Apple Onion Mayo:

  • 1 cup mayo
  • 1 tsp carmelized onion
  • 1 tsp apple sauce

The Focaccia Bread

  • 1 tbsp of garlic butter
  • 1tbsp of Extra Virgin Olive Oil

Melt in pot. Take a paint brush and cover both sides of the bread with the mixture. The put the top and bottom of the sandwich in the panini press before adding the toppings.

While the focaccia is pressing:

  • Thinly slice red onion enought to cover the whole patty
  • Slice the Buffalo Mozzarella, ready for topping

By now your focaccia should be pressed, spread the Apple Onion Mayo on bothsides of the focaccia bread. Put the patty on the sandwich. then add your sliced onions and mozzarella.. Cover with top and put on the panini press!

This is the final product.. Turned out perfect and tasted better

than what we expected!!

         New Foodie does Toasted Donair Ravioli

“A maritime favorite with an Ammie Parsons twist”

¬†So I am new to the blogging world. I myself have never blogged before and to be honest have only read a few blogs done by my friends that I know¬†are REALLY funny. What inspired me to do so you ask? I¬†have been thinking¬†about this for about a month or so now after my¬†friend Kelly and also my favorite server at my favorite restaraunt Kellock’s called my husband and I foodies. After cooking all weekend and posting MANY instagram photo’s on my facebook over the last few months of my husband John and I’s food creations and our many homecooked meals I figured a blog would be a great way to share my/our ideas with those of you that are interested. I also think¬†sharing my experiences¬†will motivate me to cook more and to try new recipes ūüôā

 I was never really into to food other than your typical roasted chicken and pork dinners.. I also used to eat alot of processed foods and picked my way through most of the home cooked meals that I was faced with (sorry mom). I was super fussy so fussy I used to go as far as straining my salsa so I didnt have to deal with the tomatos. My husband and planting my own garden changed all that for me.. I am a whole new woman now, with an open mind. I am now eating just about every veggie under the sun, very minimal processed foods and alot of authentic foods including my most recent favorite.. Sushi!! Someday I plan on trying to make that and when I do I will share with you, I promise!

¬†So a few weeks ago after watching Diners Drive Ins & Dives and talking to our friends about maybe doing a cook off with the main ingredient being pork.. I came up with what turned out to be a delicious appetizer that will pull on the heart strings of any maritimer I call the “Toasted Donair Ravioli”

This is how it’s done!!

The first thing you need to make for this recipe is the Donair Sauce this needs to sit for at least a few hours and the longer it sits the better it tastes. I have made Donair Sauce alot and have it down to a tea. The key is when you make it, use regular canned milk, the low fat just doesnt sit right. If you are watching your weight this probably isn’t the best route to go!

You will need:

      2/3 cup canned milk
      2/3 cup sugar
      1/4 cup white vinegar
      1/2 tsp garlic freshley grated (you can use powder if you dont have the fresh garlic)

Directions

     Stir canned milk, sugar and garlic powder until sugar is dissolved let sit for a couple of minutes then stir again making sure all the sugar is dissolved. Stir hard add vinegar all at once, once it is added only 3-4 times. The quicker you add the vinegar and the less you mix, the thicker the sauce will be. Let sauce sit for at least 2 hours in refrigerator before using when you go to use it give it another good stir.  The key is if you stir it to much the milk will seperate from the vinegar! Follow this and it will turn out perfect and you can use it for this recipie and donairs, garlic fingers and donair pizza.. it also lasts for a week!!
     Of course I made the filling myself, I researched recipies and tweaked it to my own.. Here it is!

You will need:

  • 1¬† tsp salt
  • 1¬† tsp ground oregano
  • 1¬† tsp all-purpose flour
  • 1/2¬† tsp ground black pepper
  • 1/2¬† tsp Italian seasoning
  • 1/2¬† tsp garlic powder
  • 1/2¬† tsp onion powder
  • 1/4¬† tsp cayenne pepper
  • 1/2¬†pound ground beef
  • 1/2 pound ground pork

I let this sit wrapped in saran wrap overnight to let the meat absorb the flavors.

The next day I added:

  • 1/2 cup¬†fresh¬†cherry tomates (I removed the seeds and meat in the center to remove most of the water)
  • 1 grated¬†medium¬†onion
  • 1/2 FINELY chopped onion
  • 1/2 cup of Mozzarella Cheese

You will now need a package of wonton wrappers and egg wash.. I brushed the eggwash on with a paint brush and used a melon baller to measure the meat!

¬†Cover the filling over with another wonton wrapper and use the pressure of a fork to seal it off.. Make sure there isn’t to much filling, if there is they will explode in the deep fryer. Not a good scene!!

¬†Next you will need¬†a bowl of egg wash and two plates with Italian bread crumbs on them. Dip the ravioli in the egg wash and put each side of the ravioli on each plate to make sure they are covered well!! Like this below….

Last but not least it is time to deep fry, we don’t have a deep fryer for obvious reasons one being I would be as big as a house due to eating fresh cut fries once a day. For this I used a cast iron pan and about 2 cups of vegetable oil..Heat oil and Fry at about¬† 5 for about 7 minutes turning over occassionally so the pork gets well cooked. Remove from oil and put on a plate with paper towel to absorb any access grease..

¬†Put on a serving plate with the donair sauce and they are ready to serve!!! These are time consuming but are well worth it and are going to be hit with all of your friends and family!¬†Good luck and most of all enjoy!¬†ūüôā
